Inulin is from Jerusalem artichoke, and has many different functions, including the
replacement of fat and carbohydrates in dairy products, frozen desserts, table
spreads, baked foods and breads, breakfast cereals, fillings, fruit products,
salad dressings, meat products, dietetic products, and meal replaces, chocolate
and tablets.
